Many of us wait for months to enjoy some warmer weather and by the time the winter has come to an end, we have had our fill of the cold and snow. Of course, once the summer gets here, we quickly remember how uncomfortable it can be when it gets blazing hot, but there are things you can do to cool yourself off again.
For many of us, it’s not simply a matter of going into the air-conditioning or standing in front of a fan. We want something cool to eat that is going to quench our thirst and at the same time, lower our temperature and make us feel comfortable again. Although there are many options available to do this, sorbet is one that should not be overlooked.
If you would like something fun to cool yourself off this summer, then this is a recipe you will want to remember. It uses only one ingredient but that doesn’t mean that it is lacking in flavor. All you need to do is cut up some watermelon, put in the freezer and before you know it, you will have the perfect summer treat.
1. Arrange your cubes of watermelon on a 9″x13″ baking sheet in one even layer. Then, put that baking sheet in the freezer for at least 2 hours, allowing watermelon to freeze completely.
2. Remove the tray from the freezer. Then, in about 4 batches or so, add watermelon to your food processor and puree until completely smooth.
As you go, empty the puree into a loaf pan, packing down and evening out the sorbet with a spatula or wooden spoon. Continue until all the watermelon is pureed and the loaf pan(s) is fully packed.
3. Place the loaf pan(s) in the freezer for another hour or two. When you’re ready to enjoy, remove from the freezer, allow to sit on the counter for about 5 minutes, then scoop out into bowls with an ice cream scooper. Yum!
