Peanut Butter Chocolate Chip Crispy Bars

 

They are a great alternative to store-bought bars that are full of preservatives and non-sense. These are homemade and HEALTHY!

INGREDIENTS

1/2 cup natural peanut butter (chunky or smooth)
1/3 cup brown rice syrup
1 tbsp. maple syrup
2 tsp. vanilla extract
2 tbsp. mini chocolate chips
2 cups crispy rice cereal
Chocolate Drizzle
1/3 cup non-dairy chocolate chips
1 tsp. coconut oil

INSTRUCTIONS

In a medium bowl, stir together peanut butter, brown rice syrup, maple syrup, and vanilla.
Stir in chocolate chips and crispy cereal.
Press mixture into a parchment lined 8-inch square pan. Place in refrigerator to firm up, about 20-30 minutes. Cut into bars.
Chocolate Drizzle
Take the chocolate chips and coconut oil and melt them over a double broiler.
Pour into a small ziplock bag.
Snip off one of the bottom corners and pipe melted chocolate over crispy bars. Place bars back in refrigerator to firm up the chocolate.
