INGREDIENTS
Burger
1 lb. of ground turkey breast
1 lb. of ground turkey thigh
1/3 cup of sliced green onions
3 finely minced cloves of garlic
2 tsp. of finely minced fresh ginger
Kosher salt and fresh cracked pepper to taste
sesame oil

Sweetened Soy Sauce
1/2 cup of soy sauce
1/2 cup of brown sugar
3 tbsp. of honey

Vegetables
1 small sliced cucumber
1 pint of quartered assorted cherry tomatoes
1/2 sliced small red onion
1 tbsp. of mayonnaise
Kosher salt and fresh cracked pepper to taste
1/4 cup of rice wine vinegar

INSTRUCTIONS
In a medium sized pot add in the soy, brown sugar and honey and cook on medium-high heat until it becomes thick like syrup. Take note that it will cook fast and can burn easily so watch closely. Once it is cooked, remove from the heat and let cool.
In a large bowl mix together both ground turkey meats, green onions, ginger, garlic , salt and pepper and form 6 patties. Next, brush the outside of the burger patties with sesame oil and cook on a very hot grill (450 F to 550 F) on each side until grill marks are formed and the burgers are cooked through (about 4 to 6 minutes on each side). Once they are cooked, set aside to rest for a few minutes before serving.
In a separate bowl mix together the mayonnaise, rice wine vinegar and sugar and add in the cucumber slices, quartered cherry tomatoes and red onions and mix.
Toast the buns on the grill and serve the turkey burgers on each of them. Top off by drizzling on 1 teaspoon of the sweetened soy and a few tbsp. of the mixed vegetables.
