Delicious Summer Berry Cheesecake Salad

When it comes to summertime treats, there is nothing quite like having a fresh, delicious salad. Of course, you wouldn’t want to skip any of the fruits and berries that were available during the summer months when making it. When you try this treat, however, it will quickly become your new go-to recipe for the summer months.

This is one of those salads that is perfect to have on hand. You can eat it along with breakfast, lunch and dinner and it is unlikely that you will ever get tired of the delicious taste. Best of all, it’s a healthy salad that gives you plenty of antioxidants from the fresh berries you use.

First of all, gather your ingredients.

1 pound strawberries, hulled and cut into quarters
1 (9 ounce) container blueberries, washed and dried (remove stems)
1 (9 ounce container) raspberries, rinsed and dried
1 (8 ounce) package cream cheese
1/2 cup Simply Pure Vanilla Coffee Creamer

The creamer adds something special in the way of creaminess and richness to the cheesecake filling. It also adds that touch of sweetness that makes it absolutely delicious. Once you start eating it, you may never be able to stop!

Prepare berries and lay them on paper towels to dry while you prepare the cheesecake mixture.

In a medium tall bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up.

With mixer running slowly add creamer to the cream cheese. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese. Continue until all of the creamer has been added to the cream cheese. Whip until smooth.

Combine berries in a large bowl. Gently fold in cheesecake mixture until completely combined.

Chill until ready to serve or serve immediately
