1 lb. cooked, fresh lobster meat, cut into bite-sized chunks
1/4 cup low fat mayonnaise
salt and white pepper, to taste
2 tbsp. butter, softened
4 hot whole wheat dog buns, or similar shaped buns sliced open from the top
2 cups shredded butter lettuce
Combine lobster meat and the low fat mayonnaise; mix well and set aside.
Open buns and spread butter over both sides. Heat skillet over medium heat. Place open, buttered buns in the skillet and cook until lightly browned; about 2 minutes per side.
Divide lettuce between buns and top with lobster mixture. Serve immediately.
