These tarts are a perfect solution for a busy household. These take less than 30 min.
6 x 1/4 cup shredded zucchini (1/4 cup for each tart)
6 tsp. chopped, fresh mint
6 tbsp. feta cheese (crumbled)
pepper to taste
1 cup milk
6 sheets of phyllo
Spray 6 muffin cups with cooking spray and each piece of phyllo.
Fold each phyllo into fours and tuck into muffin cups.
Top with zuchini, mint, feta and pepper. Beat together the eggs and milk and pour into each cup.
Bake at 350 F for 20 minutes or until the custard is set.
