Steamed Artichokes with Lemon Dijon Sauce

 

The fresh flavor of artichokes goes well with zesty lemon. This dish incorporates the fruit into a tangy dipping sauce that is perfect for steamed artichoke leaves. Serve this recipe as a springtime appetizer or as an afternoon snack.

INGREDIENTS:
4 small artichokes, trimmed and halved
3 tablespoons fresh Paramount Citrus lemon juice
Zest of 1 Paramount Citrus lemon
1 clove garlic, grated
1 tablespoon prepared Dijon mustard
3 tablespoons mayonnaise
1 tablespoon extra virgin olive oil
1/8 teaspoon ground black pepper
Pinch of salt
Paramount Citrus lemon zest for garnish

PREPARATION

1. Place the artichoke halves in a steaming basket set over a pan of water. Cover with a lid and bring the water to a low boil. Steam for about 20 minutes, until a few outer leaves begin to fall off and the center of the artichokes are tender.

2. While the artichokes steam, make the dipping sauce. In a small dish, add the lemon juice, lemon zest and garlic. Whisk in the mustard until combined. Whisk in the mayonnaise until well combined and smooth. Whisk in the olive oil, black pepper and salt.

3. Place the artichokes on a serving platter, cut side up with the dipping sauce on the side. Garnish the plate with additional lemon zest. Serve the artichokes warm.
