They are just like potato skins and so easy to make. Leave out the cheese and this easily turns into a paleo and dairy free dish.
12 small red potatoes
Oregano to taste (or your herb of choice)
Garlic powder to taste
Salt & pepper to taste
4 slices bacon, cooked & finely chopped (I used nitrite/nitrate free Applegate brand)
Shredded cheddar cheese
Boil potatoes in a pot until tender – do not over cook.
Preheat oven to 450Â F.
Drizzle a baking pan/sheet with olive oil.
Place potatoes (leaving space in between) on pan and using a potato masher, slightly crush each potato.
Drizzle with olive oil, season with above ingredients and bake for 20 minutes.
Remove and add the bacon and cheese and place back in the oven until cheese has melted – a few minutes on broil.
