Unbelievably easy, delightfully tasty, perfectly filling, chia pudding makes for a perfect breakfast or snack.
1/2 cup light coconut milk [the canned kind]
1/2 cup unsweetened almond milk
1-2 pitted dates
3 tbsp. chia seeds
1 tsp. cinnamon
Add all ingredients except chia seeds to a blender. Once the mixture is smooth, pour it into a medium bowl and stir in chia seeds.
Cover and refrigerate for 4 hours.
