Frozen Watermelon Granita Recipe

 

This refreshing treat is sweet, hydrating and perfect for relaxing in the sunshine.

Preparation Time : 20 minutes
Cook Time : 5 1/2 hours (includes freezing)

Ingredients
750 mL (7 cups) watermelon, seeded and chopped (a 4- to 5-pound watermelon)
125 mL (1/2 cup) sugar
30 mL (2 tbsp) lemon or lime juice
Pinch of salt
Lemon or lime slices, to garnish

Instructions

Working in batches, purée 2 or 3 handfuls of watermelon at a time in a food processor or blender until smooth
Measure 100 mL (4 cups) puréed watermelon and transfer into a large mixing bowl

Add sugar, citrus juice and salt, whisking until sugar dissolves
Pour mixture into 33-by-23-centimetre (13-by-9-inch) pan and place in freezer for approximately 45 minutes, or until the edges begin to ice
Remove pan from freezer, whisk mixture again and return to freezer and let sit an additional 45 minutes, or until mixture becomes slushy
Remove pan from freezer again, whisk once more and return to freezer

Let sit 3 hours, or until mixture is solid (keep frozen until ready to serve, up to one day in advance)
To serve, scoop granita into bowls or glasses
Garnish with a wedge of fresh watermelon.
