A mexican shrimp quesadilla or wrap

 

Quick and yummy dinner ..amen! The ingredients are all fresh and it’s a killer combination.

This was literally 20 minutes, start to finish.

This can also be made into tacos / wraps – whatever floats your boat.

Ingredients:

2 medium tomatoes, diced
1 large avocado, diced
1/2 small red onion, finely chopped
1 tsp olive oil
Juice of 1 lime
1/2 tsp garlic powder
1/2 tsp paprika

16 large shrimp, de-shelled & deveined
Garlic powder, salt and pepper to taste
4 scallions, chopped
Shredded cheddar cheese
8 whole wheat tortillas

In a medium bowl, combine the first 7 ingredients and set aside.

Season the shrimp with the garlic powder, salt and pepper.

Drizzle a grill pan or spray with olive oil.

Add shrimp and scallions and cook for 2-3 minutes per side, on medium heat, or until cooked through.

Remove from heat and chop em up.

Heat the tortilla on medium heat until warm on both sides, flipping once.

Add the cheese and allow to melt.

Add the shrimp pieces and some of the salsa.

Top with another heated/warmed tortilla (I just used another separate pan to heat the second tortilla).

Cut like a pizza and serve.

Yields 4 servings.
