Healthy pumpkin chocolate chip oatmeal cookies

 

1/2 cup pumpkin purée
1 egg
1 tsp vanilla
3/4 cup whole wheat flour (or white)
1 1/2 cup old fashion oats
1/4 cup white sugar
1/4 cup golden sugar
1/4 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/2 cup chocolate chips
1/2 cup dried cranberries

Mix pumpkin, egg and vanilla together. In a separate bowl mix together all dry ingredients. Fold together all ingredients. It will be thick, roll into balls and drop onto a greased cookie sheet. Bake at 350 for 12-14 minutes.

I don’t measure the spices, and I only use half the amount of cranberries and chocolate chips and I still find these cookies fully loaded.
