Chocolate Covered Almond Butter Balls

 

Perfect if you are craving something sweet and want it a little healthier, but still want a treat.

INGREDIENTS
1 cup almond butter
2 tbsp. raw honey*
2 tbsp. oat flour
1 tsp. vanilla extract
1/4 cup almond slivers (toasted, if desired)
3/4 cup non-dairy chocolate chips
1 tsp. coconut oil
INSTRUCTIONS
Place almond butter, honey, oat flour, and vanilla extract in the bowl of a food processor. Process until well combined and smooth. Pulse in the almond slivers.
Line a sheet pan with parchment paper. Roll a heaping tablespoon of almond butter mixture into a ball and place on parchment; repeat with remaining mixture. Freeze until completely firm, at least 1 hour.
Once almond butter balls are firm, start melting the chocolate and coconut oil together in a double boiler or in 30-second intervals in the microwave. Using a fork or tooth pick, dip the balls into the chocolate and lightly shake off excess. Place chocolate-covered ball back on parchment paper; repeat with remaining. Freeze until completely firm, at least 1 hour.
Can be stored in the refrigerator or freezer. May be easier to eat served directly from refrigerator though, depending on how cold your freezer gets.
NOTES
*You can use maple syrup, agave nectar, but you may have to use 1 or 2 extra tbsp. oat flour.
