Blueberry Pierogies

 

Delicious treats with maple syrup and berries.

INGREDIENTS
Dough
3 cups flour
1/2 tsp. baking powder
3 tbsp. melted butter
3/4 cup milk
Filling
1 cup cottage cheese (drained in a colander for a couple of minutes)
1/2 cup icing sugar
1/4 tsp. nutmeg
1 cup blueberries (fresh or frozen)
1 tsp. vanilla (I like to use the paste)

INSTRUCTIONS
Dough
Mix the flour and baking powder together and add the milk and melted butter. Form into a ball that is moist but not sticky and need for a couple of seconds before letting rest (covered with a bowl) for 10 minutes.

Filling
Combine the ingredients.
Assemble

Divide the dough into 24 pieces, make into a ball and roll out (with as little flour as possible) into ΒΌ inch rounds. Fill with one heaping tbsp. of filling and pinch to seal.
Drop into boiling water and cook until they float.
To finish; fry in toasted butter and serve with maple syrup and more berries.
