Blueberry Pierogies

 

Delicious treats with maple syrup and berries.

INGREDIENTS
Dough
3 cups flour
1/2 tsp. baking powder
3 tbsp. melted butter
3/4 cup milk
Filling
1 cup cottage cheese (drained in a colander for a couple of minutes)
1/2 cup icing sugar
1/4 tsp. nutmeg
1 cup blueberries (fresh or frozen)
1 tsp. vanilla (I like to use the paste)

INSTRUCTIONS
Dough
Mix the flour and baking powder together and add the milk and melted butter. Form into a ball that is moist but not sticky and need for a couple of seconds before letting rest (covered with a bowl) for 10 minutes.

Filling
Combine the ingredients.
Assemble

Divide the dough into 24 pieces, make into a ball and roll out (with as little flour as possible) into ¼ inch rounds. Fill with one heaping tbsp. of filling and pinch to seal.
Drop into boiling water and cook until they float.
To finish; fry in toasted butter and serve with maple syrup and more berries.
