Spring Cobb Salad with Lemon Parmesan Dressing

 

This salad incorporates seasonal produce and hearty meats and cheeses to please everyone at the table. It’s topped with a simple lemon dressing that brings out the refreshing flavors of spring.

TIME TO TABLE:
20 minutes prep.

INGREDIENTS:
2 cups chopped fresh spinach leaves
2 cups chopped fresh bib lettuce
4 radishes, chopped
2 green onions, sliced
½ cup cubed ham or Canadian bacon
¼ cup fresh green peas
¼ cup cubed smoked Fontina or Provolone cheese
2 hard boiled eggs, sliced

Dressing:
Juice and zest of 1 Paramount Citrus lemon
3 tablespoons olive oil
2 tablespoons freshly grated Parmesan cheese
2 cloves garlic, peeled
1/8 teaspoon ground black pepper
Pinch of sea salt

PREPARATION

1. On one large serving platter or two single serving platters, arrange the salad ingredients in rows. Alternating colors creates a pleasant presentation. For example, on the left side of the plate begin with radishes, then green peas, spinach, ham and cheese, green onions, lettuce and top the lettuce with sliced eggs.

2. Add the dressing ingredients to a small food processor. Pulse until the garlic is finely chopped and the dressing is combined.

3. Serve the salad with the dressing on the side.
