Simple Summer Salad

 

1 pound Grape Or Cherry Tomatoes
4 Tablespoons Balsamic Vinegar
6 Tablespoons Extra Virgin Olive Oil
1 clove Garlic Clove, Pressed
12 ounces, weight Pasta, Shell Shaped
½ cups Crumbled Feta Cheese
¼ cups Fresh Basil, Finely Chopped
¼ cups Fresh Parsley, Chopped

Preparation

Cut tomatoes in half and set aside. In a large bowl mix balsamic vinegar, oil, and garlic. Add tomatoes and toss together. Let sit for about 1 hour. This will let some of the juice come out of the tomatoes and also allow them to soak up the dressing.

Cook pasta and drain. While pasta is still warm add to tomatoes. Add the feta cheese, and chopped herbs and mix well. Serve immediately and enjoy.
