Really easy Mexican tostadas breakfast tortillas.


Personalize your breakfast by adding your favorite toppings.

Corn tortillas (desired amount)
Scrambled eggs or egg whites
Any of your favorite breakfast toppings
Optional seasoning: creole, garlic, salt, etc.

Place top rack on top-most notch in oven. Set oven to broil.
Spray a baking pan with non-stick cooking spray, and lay out tortillas. Spray tops of tortillas. (You can season tortillas here if you wish!)
When oven is ready to broil (when coils are orange), pop your tray in the oven.
This is where a little bit of trial and error comes into play depending on your oven. Broil about 1 minute, or until you see the tops of the tortillas starting to brown.
Remove tray from oven, flip tortillas. Again, let broil about 1-2 minutes, until flipped side also begins to brown.
Take out and let cool a few minutes. Top with your favorite breakfast toppings and serve!
