Parmesan Chicken

 

1/2 C. Butter
1 C. Grated Parmesan cheese
2 Tablespoon parsley flakes
1/4 tsp. Pepper
1 1/2 crushed Ritz crackers
2 Tablespoon dried minced onion
1 tsp. Garlic powder
Boneless Skinless Chicken Breast

Melt butter. In a bowl combine the rest of the ingredients. Dredge chicken in butter, then in crumb mixture. Sprinkle with remaining crumbs. Bake at 400° for 20 to 30 minutes or until juice runs clear. Sometimes I get a jar of roasted Parmesan sauce and trickle some on the chicken before putting in the oven.
