Easy Green Bean Pasta Salad Recipe


Green Bean Pasta Salad
Serves: 4-6
Prep time: 25 minutes
Cook time: 5 minutes

For Dressing
30 mL (2 tbsp) fresh lemon juice, (approximately 1/2 to 1 lemon)
50 mL (1/4 cup) fresh lime juice, (approximately 2 limes)
45 mL (3 tbsp) orange juice, no pulp
7 mL (1 1/2 tsp) red wine vinegar
1 clove garlic, minced
1 mL (1/4 tsp) sugar
2 mL (1/2 tsp) salt
125 mL (1/2 cup) olive oil
7 mL (1/2 tbsp) poppy seeds
Black pepper, to taste

For Salad
1 box bowtie pasta, cooked and rinsed
55 grams (2 ounces) blue cheese, crumbled (add more if desired)
250 mL (1 cup) red grapes
375 mL (1 1/2 cups) cooked green beans, chopped
2 medium-ripe Anjou pears, sliced
125 mL (1/2 cup) dried tomatoes

Optional: grilled chicken slices


Place all dressing ingredients in a jar with a tight lid and shake vigorously. Let stand in the refrigerator for 30 minutes before serving to blend the flavours
Rinse and dry salad greens and fresh produce
Toss all ingredients together in a large salad or serving bowl
Sprinkle dressing over the salad and toss.
