Creamy Tofu “Mayo”


Super quick and easy to whip up, you can make as much or as little as you need by choosing different sized cartons of tofu.

9 oz. silken tofu, drained
1 clove garlic, crushed
1/4 cup freshly squeezed lemon juice (1 large lemon)
1/2 tsp. salt
2 – 3 tbsp. olive oil
a few grinds black pepper

Whisk tofu and garlic together in a bowl until smooth.
Whisk in lemon juice, season with salt and pepper, adjusting to taste.
Add olive oil by tbsp. to your desired consistency.
