Quick and easy lunchbox treats. Thick and chewy bars loaded with caramel flavor.
1 cup plain flour
1 cup quick cooking oatmeal (not instant)
3/4 cup lightly packed light brown sugar
1 tsp. baking powder
1/2 tsp. fine salt
3/4 cup, 1 1/2 sticks butter, melted
3/4 cup caramel bits
Preheat oven to 350 F / 180 C and lightly grease a brownie pan (mine was 16 x 25cm, 6 x 10 inches).
Stir together flour, oats, sugar, baking powder and salt in a mixing bowl.
Add the butter and mix it in, then fold in toffee bits.
Press the mixture lightly into the pan.
Bake in centre of oven for about 30 minutes, until the edges are browned. Cut in pan then allow to cool completely.
