So i’m really in love with this bread.The banana-date combination ignites something special for me. So naturally sweet and I cannot recommend this bread enough.
1 cup gluten free flour
1 tsp baking soda
1 tsp baking powder
Pinch sea salt
2 small bananas, ripe & mashed
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/3 cup almond milk
1 tsp vanilla extract
3-4 dates, pitted & chopped
IF you chose to omit the dates, I would recommend increasing the maple syrup to 1/3 cup.
Preheat oven to 350F.
Grease a loaf pan with coconut oil or line with parchment paper.
In a bowl mix all the dry ingredients.
In a separate bowl, mix all of the wet ingredients.
Slowly add the wet to the dry and just combine.
Pour half of the batter into the pan, then layer the dates. Pour the remaining half of the batter on top.
Bake for 45-50 minutes or until toothpick comes out clean.
Recipe makes 1 loaf.
Optional cinnamon sugar topping..
Mix 1 tsp cinnamon and 1 tsp maple sugar and evenly sprinkle on top prior to baking.
