One of my favorite things in the entire world to eat: avocado toast. This little diddy kinda dresses up the classic with a flavor rich spread.
2 cloves garlic, chopped
1/4 tsp sea salt
1 tbs fresh squeezed lemon juice
1 tsp dijon mustard
1/4 cup olive oil
3 tbsp greek yogurt
Process first 5 ingredients in a food processor or with a hand blender. Lastly, using a spoon, mix in the yogurt until fully incorporated.
8 slices prosciutto
1 avocado, sliced
1 tomato, sliced
4 slices bread/toast of choice (I used spelt toast)
optional sesame seeds & crushed nuts for topping
Assemble as pictured above, spreading the aioli first on the toast, then the prosciutto and so on with the rest.
Yields 2 servings.
