Grilled Lemon Basil Butterflied Chicken

 

In this recipe, citrus and herbs are combined to create a main course that is sure to be a hit at your next cookout. This easy chicken is coated in lemon zest, fresh basil and olive oil before it hits the grill. It cooks to a beautiful golden brown and the juicy meat has a pleasant burst of citrus flavor. Serve it with a side of grilled vegetables or a salad topped with lemon vinaigrette.

TIME TO TABLE:
10 minutes prep, 2 hours grilling.

INGREDIENTS:
¼ cup chopped fresh basil
Zest of 2 Paramount Citrus lemons
3 tablespoons olive oil
1 teaspoon fine ground sea salt
1, 5 to 6 lb. whole chicken, butterflied

PREPARATION

1. In a small dish, stir together the basil, lemon zest, olive oil and salt.

2. Rub the mixture over the chicken and under the chicken skin until the bird is evenly coated.

3. Grill the chicken, breast-side up, over indirect heat (about 325 to 350 degrees F) for 1 ½ to 2 hours, until the internal temperature of the chicken reaches 165 degrees F.
