Grilled chicken

 

This is when you don’t have any BBQ sauce on hand and you don’t want to eat plain old grilled chicken – you’re in the mood for something yummy. For the sauce, I used Annie’s Organics ketchup (I recognize all of the ingredients listed on the label) which I am a big fan of.

Ingredients:

1 lb organic chicken breasts, sliced lengthwise
olive oil, garlic powder, sea salt
1/2 cup ketchup
1/4 cup honey
1.5 tbs balsamic vinegar
optional: hot sauce to taste (if you desire some heat)

Directions:

Combine ketchup, honey, balsamic (and if you like it spicy, the hot sauce) until fully incorporated. Set aside.

Lightly drizzle each cutlet with oil, and add above seasoning (garlic powder & sea salt) to taste.

Heat your grill pan on medium high, add cutlets and cook for 5 minutes on each side, or until juices run clear in the thickest part of cutlet. Brush each cutlet with BBQ sauce and use the extra sauce for dipping.
