Make sure you try these ultra-healthy Vegan Cranberry Scones
3 1/4 cups spelt flour
4 1/2 tsp. baking powder
1 tsp. sea salt
6 tbsp. coconut oil, chilled
1 cup almond milk
1/3 cup agave nectar
1 cup cranberries
Preheat oven to 375 F, line a baking dish with unbleached parchment paper.
Mix the flour, baking powder and salt in a large mixing bowl. Add in the coconut oil by forking it is in pieces and then stir in the cranberries.
Stir the almond milk and agave nectar in another bowl, add to flour mixture and whisk until well stirred.
Shape the dough into a 1 inch thick round and cut into 12 circles, place onto the baking pan with about an inch between each scone and bake for 15-20 minutes, depending on how golden and crispy you want your scones to come out.
