Dairy Free, Gluten Free, Soy Free Pear Mini-Muffins – Yummy!
1 cup white rice flour
1/4 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons granulated white sugar
4 tablespoons dairy free coconut yogurt
2 mashed ripe pears
Preheat oven to 350°F. Line muffin pan with paper baking cups.
In a medium bowl, mix together the white rice flour blend, sugar, baking soda and salt.
Next add the egg and yogurt, blend well.
Stir in pears.
Spoon into paper cups, filling to the top.
Bake for 11 minutes or until a wooden pick inserted in center comes out clean.
Remove from the pan and cool completely on a wire rack.
Yields: 16 Mini-Muffins
