Double antioxidant muffins

 

healthy and really easy to make!

1 egg
1/2 cup sugar
1/2 cup coconut oil
1/4 cup butter
1 cup dried blueberries
1 cup fresh (of frozen) blueberries
2 tsp. baking powder
1/2 cup cornmeal
2/3 cup milk
1 1/2 cup flour

1.Beat together butter, oil, egg and sugar. Add cornmeal blueberries and baking powder.

2.Fold in flour and milk. Divide between 12 large muffins and bake for 20 minutes at 350 F.
