These muffins are packed with goodness; whole wheat flour, bananas, goji berries, and walnuts.
INGREDIENTS
3/4 cup whole wheat flour
3/4 cup white flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup brown sugar
2 tbsp. canola oil
1 egg
2 tsp. vanilla
1 cup mashed banana
1 cup oats
1/2 cup goji berries
1/2 cup walnuts (optional)
INSTRUCTIONS
Preheat oven to 350 F.
Combine flours, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
In a large bowl; combine brown sugar, oil, egg, vanilla, and mashed bananas, stir well.
Add dry ingredients into the wet ingredients and stir until everything is incorporated. Stir in oats, goji berries, and walnuts.
Spoon batter into muffin cups sprayed with non stick cooking spray. Bake for 30 minutes.
