Gluten-free, grain-free, almond butter (heart healthy fats). Delicious taste and a nutrient powerhouse!
1/2 cup almond butter
1/2 cup unsweetened applesauce
2 whole eggs
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1/4 cup mini dark chocolate chips (I use Enjoy Life mini chips – dairy, nut & soy free)
Preheat your oven to 350 F and line a baking sheet with parchment paper, yes you bake these instead of making them on a griddle.
In a medium bowl, combine all of the ingredients except the chocolate chips and mix until smooth.
Fold in the chocolate chips
Scoop the batter using a 1/4 cup onto the lined baking sheet (or two), to form 9 pancakes.
Bake for 10-12 minutes, until the pancakes are fluffy and golden.
