Make These Simple Potato Skins for Your Next Party

There are certain appetizers that have been favorites for quite some time and it seems as if we get them every time we are out at a restaurant. One of those appetizers are potato skins, and if there was such a thing as an appetizer Hall of Fame, they would be in it right away.

Most of us enjoy potato skins at restaurants but did you know that they are quite easy to make at home? You can make these in the oven and before you know it, everybody in your house will love you!

This is from Jamielyn’s blog. You can thank me later.

“Brush both sides of the potatoes with butter and sprinkle salt,” Jamielyn wrote.

Before adding all of the yummy toppings to the potatoes, she let them bake in the oven for about 40 minute until they had lightly browned.

“Turn potatoes onto the opposite side after about 15 minutes, to brown the other side,” Jamielyn wrote.

Finally, she took the potatoes out and covered the top with layers of cheese, bacon bits, and green onions. At this point, add any other of your favorite potato skin toppings!

Jamielyn finished topping all the slices and put the potatoes in the oven one more time for a few minutes.

When they come out, they’re ready to eat right away — just make sure you don’t burn your tongue!

Ingredients:

4 large baking potatoes (washed)
3 TB butter, melted
2 teaspoons of kosher salt
1 1/2- 2 cups of shredded cheddar cheese
7 slices bacon -cooked and crumbled (or 1/2 cup bacon bits)

Directions:

Pre-heat oven to 400°. Cover a baking sheet with foil and spray with non-stick cooking spray. Set aside.

Wash potatoes and then cut the ends of the potatoes off and discard. Next cut the rest of the potatoes into approximately 1/2 inch slices.

Brush both sides and edges of the potatoes with butter and sprinkle with salt. Place on the foil covered pan and bake for 30 to 40 minutes, or until lightly browned. Turn potatoes onto the opposite side after about 15 minutes, to brown the other side.

When potatoes are done, top with cheese, bacon and green onions. Continue baking for 3-5 minutes, or until the cheese in nice and bubbly.

These also taste great topped with a little sour cream. Enjoy!
