Pumpkin Pecan Baked Oatmeal

 

Warm, stick-to-your ribs goodness in the form of oatmeal with pumpkin, pecans, and brown sugar. This one-dish breakfast bake will have your kids coming to the table cheerfully even on the chilliest of fall mornings.

INGREDIENTS
1 cup old-fashioned oats
1/3 cup brown sugar
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. ground ginger
1/2 tsp. freshly grated nutmeg
1/2 tsp. salt
1 1/2 cups milk
1 egg beaten
1/2 cup pumpkin puree
1 tsp. vanilla extract
1 tsp. freshly grated orange zest
1/4 cup chopped toasted pecans

INSTRUCTIONS
Preheat oven to 350 F. Spray an 8-inch round baking dish with nonstick baking spray.

In baking dish, combine oats, sugar, cinnamon, baking powder, ginger, nutmeg, and salt.

In a medium bowl, whisk together milk, egg, pumpkin, vanilla, and orange zest.

Add wet ingredients to dry ingredients and stir. Add pecans and combine. Bake for 30 minutes at 350 F, or until center is set. Let stand for 5 minutes before serving.

Serve with milk or cream if desired.
