Pasta with Mascarpone Chicken Solar-Dried Tomatoes & Spinach


What you will need:

1 cup Mascarpone Cheese, at room temperature

1 Lemon, zest and juice

1 tsp Cracked Black Pepper

three Boneless Skinless Hen Thighs, trimmed and 1″ cube

1 1/2 Tbsp Olive Oil

2 cloves Garlic, peeled and minced

Salt & Pepper, to style

1/three cup Chopped Solar-dried Tomatoes

1× 9 oz bag Child Spinach

1× 500 Gram Pkg Pasta

to Serve:

Sauteed Garlic Breadcrumbs or Grated Parmigiano Reggiano or Pecorino Cheese


Mix the zest, lemon juice, mascarpone and pepper in a bowl, then whisk to mix. Carry a pasta pot of salted water to a boil. In the meantime, warmth the oil in a skillet and cook dinner the hen except it is cooked thru and simply starting to brown, 6-eight minutes. Add the garlic and cook dinner some other minute or two, then season with salt and pepper.
