It’s so simple and so delicious. The chopped on onion with the pop of the pomegranate truly makes for a party in your mouth.
1 bunch kale
1/4 cup extra virgin olive oil
1/4 red wine vinegar
1/2 cup pomegranate seeds
1/2 white onion, diced
Fat pinch of kosher salt and some black pepper
Wash, stem, and chop kale into small pieces.
Combine the rest of the ingredients in a small bowl and whisk with a fork until everything is well combined.
Pour dressing over the kale.
Notes: Try serving this along side a nice big bowl of soup or with a simple roasted chicken. It’s also great on it’s own should you be in the mood for a super delicious and nutritious light dinner.
