mozzarella, pesto and tomatoes marry together!
4 slices thick country bread or 1 small baguette
4-6 slices prosciutto
4-6 slices fresh mozzarella
1/4 cup pesto
1 chopped tomato
Spread pesto on both slices of bread.
Layer on the mozzarella, tomatoes and prosciutto.
Spray or paint the outside of each slice of bread with olive oil.
Grill over medium high heat until bread is toasted and cheese begins to melt.
Flip and toast the other side.
Slice and serve warm or room temperature.
