Brownie Muffins perfect combination. Take less than 20 minutes to bake!
1 cup flour
1/2 cup brown sugar
3/4 cup cocoa powder
1 tbsp baking powder
1 tsp. salt
1 egg + 1 yolk
1/4 cup vegetable oil
1 cup milk
1/2 cup chocolate chips
Preheat oven to 350 F and spray one 12-cup muffin pan with cooking spray. In a large bowl, combine flour, brown sugar, cocoa powder, baking powder, and salt.
In a separate, smaller bowl, whisk together egg and yolk, oil, and milk until well combined. Pour this mixture over the flour mixture and stir with large wooden spoon until a few streaks of flour remain. Then, stir in chocolate chips until evenly dispersed.
Fill muffin cups 2/3 way full with batter (I use an ice cream scoop!) then bake at 350 F for 15-17 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Let cool in pan for 5 minutes before carefully removing to a wire rack to cool completely.
