1 ½ cups roasted, unsalted peanuts
1 tablespoon olive oil
Juice of 1 lime*
Zest of 1 lime*
¼ teaspoon garlic powder
¼ teaspoon sea salt
Heat the peanuts in a small skillet over medium-high. Toss the nuts around the pan to heat evenly, for about 1 minute, or until you begin to smell the peanut aroma. Stir in the olive oil, lime juice and lime zest.
Continue to cook until the nuts begin to brown, about 1 minute more. Remove the pan from the heat.
Stir in the garlic powder and sea salt. Turn the nuts out onto a baking sheet and spread in a single layer. Allow to cool before serving.
