Knock-your-socks-off Salad Recipe

All you need is one in-season veggie along with some salt, pepper, and olive oil to make a knock-your-socks-off salad.

INGREDIENTS

2 medium red tomatoes, cut into bite size chunks
1/3 red onion, thinly sliced
1 clove of crushed garlic
1 tbsp. of olive oil
2 tbsp. balsamic vinegar
1 tbsp. of blue cheese, crumbled
Salt and pepper to taste
INSTRUCTIONS

Toss tomatoes and onions together in a medium bowl.

In a small bowl combine garlic, olive oil and balsamic vinegar together and whisk. Season with salt and pepper.

Toss tomatoes and onions with the dressing and top with crumbled blue cheese. Enjoy!
