Perfect Paleo Pancakes


1 ripe banana
2 eggs
1/4 c linseed meal (gives a nice wholemeal kinda texture)
1/4 c almond meal
1/4 c arrowroot or tapioca
2 tbsp coconut flour
2 tbsp coconut sugar or honey
1 tsp baking soda
Splash of vanilla, cinnamon, mixed spice and/or ginger

Just chuck this all in a bowl, and beat with the electric beater until batter forms. Heat a pan low and slow to prevent burning, and cook as you would another type of pancake. when it gets a few bubbles on top, flip it over. They take a bit longer, because they are dense with good stuff. Nice with butter and jam, fruit, syrup.
