Blueberry Pancake French Toast Bake

Sometimes in the mornings, I have a difficult time choosing between one breakfast or another. On most mornings, I either make myself some pancakes or French toast, but once I found this recipe, I realized I didn’t need to choose any longer! After all, it combines the convenience and fun of pancakes along with the deliciousness of French toast! What could be better?

This is the perfect meal, not only for your own breakfast but for your entire family. It is easy to make and you can make a batch large enough for everyone in your household to enjoy.

You will need 2 batches (15 individual) old fashioned pancakes, 6 eggs, 1 ½ cups milk, 1 cup heavy cream, ½ cup sugar, 1 tablespoon vanilla, ½ cup flour, 1/4 cup brown sugar, ½ teaspoon cinnamon, ¼ teaspoon salt, ¼ cup butter, sliced at room temperature, 1 cup blueberries, powdered sugar, and maple syrup.

The instructions are easy, first slice the pancakes in half. Arrange in a baking dish into rows with the flat side down. Pour blueberries over pancakes.

In a bowl, whisk together eggs, milk, heavy cream, sugar, vanilla, and pour the egg mixture over pancakes. Then mash together flour, brown sugar, cinnamon, salt, and butter until a crumble forms. Sprinkle over pancakes.

The best part is you can chill overnight, or for at least two hours. Next morning preheat the oven to 350 degrees and return pan to room temperature. Bake for 50-60 minutes.

Allow to cool before serving with powdered sugar and maple syrup.
