Best Ever Coffee Cake


For the Batter:
2/3 cup butter, softened
1 cup granulated sugar
2 eggs
1 tsp. vanilla
3 cups all-purpose flour
4 tsp. baking powder (yes, that’s right – 4 tsp.)
1 tsp. salt
1 1/2 cups milk

For the Topping:
1 cup packed brown sugar
4 tbsp. all-purpose flour
2 tsp. cinnamon
6 tbsp. melted butter

Preheat oven to 375 degrees F. In a large bowl cream butter and granulated sugar. Add eggs and vanilla and beat thoroughly. In a separate bowl stir flour, baking powder and salt together. Alternately add flour mixture and milk to egg mixture, ending with flour mixture. Scrape into a 9″ x 13″ greased pan and smooth top.

To make topping: Mix brown sugar, flour and cinnamon. Add melted butter and mix well. Using fingers for easy distribution, sprinkle over batter. Bake for about 35 minutes or until a toothpick inserted into the cake comes out clean. Best if served warm but still good cold!
